Seasonal Recipes

Super Power Bar

Serves: 12

Ingredients
  • 1.5 cups rolled oats
  • 1 cup crisp puffed brown rice cereal
  • 1/4 cup pumpkin seeds
  • 1/4 cup sesame or chia seeds
  • 1/4 cup slivered almonds
  • 1/4 cup unsweetened coconut
  • 2 tablespoons dried fruit (cherries, cranberries, apricots, mango...)
  • 2 tablespoons finely ground flaxseed (optional)
Wet Ingredients
  • 1/3 cup brown rice syrupl
  • 1/2 cup creamy organic peanut butter (no sugar or salt added!!!)
  • 1 teaspoon vanilla extract
Directions
  1. Put all the dry ingredients in a large bowl.
  2. In a pan mix together all the wet ingredients on low heat until smooth and warm. This will activate the glue-like property necessary for keeping the bars together.
  3. Add the wet ingredients to the dry ingredients and mix well (this might take some effort).
  4. Transfer mixture to a glass dish lined with wax paper. Press into place. Cut pieces into 2" squares and save for future breakfasts or snacks.
