Gluten Free Chocolate Chip Waffles

My New Year started like ridiculous RomCom.  I spent the evening at a friend’s apartment drinking champagne and eating homemade pizza (it was gluten free made out of chestnut and rice flours–it was insanely delicious ).

At midnight we went up to their roof and celebrated the beginning of 2014 with a light show courtesy of the Empire State building and a city of screaming New Yorkers.

That wasn’t the RomCom part.

I left my friend’s apartment around 2:30 to meet up with an old friend.  She and I first met when we were 9 and decided to be best friends because we looked alike.  I doesn’t take much at that age but the friend-love has clearly endured.

At around 3:45 a handsome man came up to the bar where I was sitting to get a glass of water.  We started in on some witty banter and quickly realized we lived 4 blocks away from each other.  If you’ve ever been in NYC on a holiday you know that cabs are a nightmare, so we decided to share.

We wandered down a few blocks and through a tunnel of twinkling lights adorning some scaffolding.  Each cab he hailed didn’t want to go to Brooklyn, so I devised a new plan: he should lay low while I hailed a cab.  Within 30 seconds we were on our way home.

On the ride back over the bridge to Brooklyn we talked about our hopes and dreams for the new year.  When he asked me my plans for 2014 I told him the only thing I knew for sure is that I wanted chocolate chip waffles for breakfast.

And I’m not telling anything else except my recipe…


Gluten Free Chocolate Chip Waffles (or Pancakes)

Servings: 4
Time: 20 minutes
What you need: 2 mixing bowls, a whisk, a waffle maker (or non stick skillet)

  • 1 egg
  • 1/4 cup extra virgin coconut oil
  • 1-1/2 cups milk: dairy, almond, rice, coconut or soy milk
  • 1 teaspoon vanilla extract
  • 1-3/4 cups gluten free all purpose flour  (if you do eat gluten you can substitute in wheat flour)
  • 1 tablespoon non-aluminum baking powder
  • 1/2 teaspoon sea salt
  • 1 tablespoon coconut sugar
  • 1/2 teaspoon cinnamon
  • a dash of freshly ground nutmeg
  • 1/4 cup dark chocolate chips (70% cacao content or higher)


Mix egg, milk, coconut oil (make sure it’s melted down into a liquid) and vanilla extract in bowl and whisk to combine.

Mix flour, baking powder,  sea salt, coconut sugar, cinnamon and nutmeg in another bowl.  Add wet ingredients to dry ingredients and mix well.  Stir in the dark chocolate chips.

Spray your waffle maker (or skillet) with some coconut oil spray, pour in the batter and cook until crispy.  If you are making the batter into pancakes spray your non-stick skillet and cook on one side until the edges firm up and the batter bubbles in the center, then flip.

Serve warm with organic butter, maple syrup, and/or nut butter
