Zucchini Pasta w/ Parsley Pesto, Putanesca and a Fried Egg

This was a total throw together meal for me.  I think the whole thing took about 7 minutes because all the parts were assembled separately.  The only thing I did was julienne my zucchini, give it a quick saute with some sweet onion and cook and egg.

I posted the pic on instagram (please follow me @quinnasteak) and people went a little cray.

So I wanted to share it with everyone!  This is a really simple and satisfying summer meal that is easy to throw together.  There are 4 moving parts but you can mix and match as you see fit.  Sometimes I just go zuke + pesto + egg.  Other times I go zukes + putanesca.  I’m wild you guys, I switch it up like it ain’t no thang.

So here we go…

Zucchini Pasta
Servings: 2
Time: 15 minutes
What you need: a food processor, a medium pan, a non-stick pan

Zucchini Pasta

  • 1 Large zucchini
  • 1 Medium sweet onion
  • 1 Tablespoon extra virgin olive oil
  • Sea salt
  • Black pepper

Parsley Pesto

  • 2 Cups of fresh parsley (can fill in /swap with spinach too)
  • 1 Cup fresh basil
  • 2 Cloves garlic
  • 1/4 Cup extra virgin olive oil
  • 1/4 Cup hemp seeds (walnuts or pine nuts are also great)
  • 1 Tablespoon of miso (red or sweet white)

Putanesca  Sauce (I used store bought!)- OPTIONAL

Fried Eggs

  • 2 Eggs
  • 1 Teaspoon butter
  • Sea salt


To make the Zucchini Pasta Finely slice an onion an saute in in olive oil on medium-high heat.  Season with salt and pepper and continue to saute.  Meanwhile, run your zucchini through the julienne mandolin.  Once your onion becomes golden, add your strands to the saute pan, season with salt and pepper.  Continue to cook for 1 more minute so the zucchini becomes “al dente”.

To make the Pesto place parsley, basil, garlic, olive oil, hemp seeds, and miso in a food processor fitted with a steel blade and blend until smooth.

To make the eggs heat melt the butter in a non-stick pan on medium-high heat.  Crack in your eggs and season them with salt and pepper.  Allow them to cook untouched for about 5 minutes until the white is completely cooked through.  If you want it to cook a little faster you can cover the pan which will steam it.

Put it all together by putting your zucchini pasta at the bottom of a large bowl.  Mix in your pesto, add on some Putanesca sauce and top it with your fried egg.
