Sautéd Radicchio with Creamy Apricot Drizzle

I have to give myself a little pat on the back for this recipe.  Often times I’m inspired by something I ate in a restaurant or by something I read online…but this little beauty was totally my brainchild.

I love the bitter veggies that are popping up out of the earth this time of year.  I find them to be very cleansing and refreshing in my body, but that is not always the case in my mouth.  The bitterness can be a bit much sometimes so I wanted to balance it out with something creamy, fruity and fresh.

RADicchio Salad with Apricot Cream Drizzle

Servings: 2-3
Time: 10 minutes
What you need: a large saute pan, a medium sauce pan, large bowl full of cold water and ice cubes (last 2 are optional)

  • 1 medium sweet onion
  • 1 head radicchio
  • 1 tablespoon extra virgin olive oil
  • 2-3 garlic cloves, minced
  • sea salt, to taste
  • 2 tablespoons golden raisins (optional)
  • chopped cilantro (to garnish)

Creamy Apricot Drizzle

  • 1 cup plain yogurt (I recommend a sheep’s milk yogurt, if ou can find it)
  • 1/2 cup apricot jam or preserves (lowest sugar possible)
  • sea salt, and black pepper, to taste



BONUS 1st STEP (optional): Blanch  the radicchio to take the edge off and decrease the bitter flavor.  

To blanch the radicchio, chop the radicchio in half then slice it into fine strips.  Place the sliced radicchio into boiling water for 1-2 minutes then place it in a bath of ice water.  Strain the radicchio and let it dry.

Finely slice the onion and saute it in a pan with extra virgin olive oil on medium-high heat.   Season it with salt and pepper.  When the onion becomes translucent (about 3 minutes) add in the garlic and continue to sauté until golden.

Then add in your sliced radicchio (and golden raisins, if using), season with salt and pepper again and continue to sauté until until it is completely wilted.

Put it in a serving bowl.

To make the Creamy Apricot Drizzle.  Simply put all the ingredients in a medium bowl and mix well to combine.

You can use the yogurt sauce as a dressing on top or mix them together throughly.  Then garnish with cilantro (if using).
