Carrot Ginger Dressing

May I present to you: The Salad Dressing That Is Also a Vegetable.  

I know.  That’s some next level stuff right there.  This dressing is super easy to make.  Just throw a bunch of ingredients in a blender and voila!  It is also mega delicious and works well on anything.  Think:  salad, cooked veggies, beans whole grains or even with some nice fish.

There are a lot of recipes out there for Carrot Ginger Dressing but most are kinda complicated and don’t even taste that great. I pinky promise that this the best and easiest recipe you’ll find.  Try it out and let me know what you think in the comments below.

Carrot Ginger Dressing

Servings: 4-8
Time: 7 minutes
What you need: a blender

  • 1/2 lb carrots (3 medium), coarsely chopped
  • 1/4 cup chopped, peeled fresh ginger
  • 1/4 cup chopped shallots (or you could do a mix of garlic and onions)
  • 1/4 cup rice vinegar
  • 1 tablespoon tamari
  • 1 tablespoon sesame oil
  • 1/4 cup extra virgin olive oil
  • 1/4 cup water
  • Sea salt, to taste
  • Pinch of white pepper


Pulse carrots in a food processor until finely ground (almost puréed). Add chopped ginger, chopped shallots, rice vinegar, soy sauce, sesame oil, and salt and pulse until ginger and shallots are minced. With motor running, add vegetable oil in a slow stream.

Transfer mixture to a blender. Add 1/4 cup water and blend until smooth, 2 to 3 minutes. Thin dressing with additional water if desired.
