Cinnamon Vanilla Chia Pudding
Oh man, if the 80’s knew about they’d be freaking out…
Combine the products in memorable commercials like: Ch-ch-ch-chia (Chia Pets) and Jell-o pudding (shout out to Bill Cosby), put them in a mason jar, shake them around and, BOOM: you’ve got Chia Pudding.
Chia seeds got their moment in the sun a few years back when they were touted as a super food for long distance runners in the best selling book “Born To Run”. Since then they have become a health-nut staple. These powerful little seeds expand in liquid and can be made into a simple, delicious, energizing treat.
It only takes about 2 minutes to make, let it sit over night in the fridge and you’ve got your self one heck of a snack, breakfast or dessert.
Chia Seed Pudding
Servings: 2
Prep Time: 2 minutes // Total time: over night
What you need: a bowl or jar with lid
- 3/4 cup milk (almond, coconut, hemp, rice, soy or cow’s)
- 1/4 cup chia seeds
- 1 teaspoon natural sweetener like maple syrup or honey
- 1/4 teaspoon alcohol free vanilla extract
- 1/4 teaspoon cinnamon
- Pinch of sea salt
Optional add-ins
- 1 tablespoon peanut or almond butter (optional)
- Sliced fruit like banana or berries
- 2 teaspoons raw cacao powder
Directions
Combine all the main ingredients in a container, mix well and let it sit overnight in the fridge.
Serve with any (or all) of the optional add-ins.
