Mint Chip Smoothie
This is one of my favorite comfort smoothies. It’s full of fresh, fabulous greens and seeds that give me the nutritional boost I crave in the morning, yet tastes like total comfort!
The mint acts as a tummy tamer (for when you’re extra stressed or digestion isn’t flowing as it should), the spinach is full of vitamins and nutrients. The flax and chia seeds add protein, fiber and healthy fats. Then the date or banana, well, they make it oh so yummy. Toss in some anti-oxidant packed cacao nibs for a bit of crunch and chocolatey goodness and you’ll be all set.
This smoothie is a great breakfast or dessert. Experiement with the ratios to make it your own.

Mint Chip Smoothie
servings: 1
Time: 5 minutes
What you need: a high power blender, measuring spoons/cups
- 1 cup almond milk
- 1 tablespoon chia seeds
- 1 tablespoon flax seeds
- 1 handful spinach
- 1 medjool date or 1/2 a ripe banana
- 3-5 mint leaves
- 1 teaspoon maca powder (optional. Add the maca if you’re in need of some extra mojo 😉
- 1 tablespoon cacao nibs
Directions
Put everything in a blender, and gradually increasing the speed until it’s on high. Blend until smooth.
