Sweet Potato Home Fries

 mmmmm home fries.  One of my all time favorite comfort foods.  I could probably eat a potato every day of the year.  These are a weekend favorite of mine.  Great with eggs or a side salad.  I always make a big batch

Sweet Potato Home Fries

Time: 50 minutes
What you need: I medium pot, I large skillet


  • 1 Large sweet potato
  • 10-12 fingering potatoes
  • 1-2 tart apples
  • 1 red onion
  • 2 cloves garlic
  • ¼ cup dried cranberries
  • 2 tablespoons coconut oil
  • 1 ½ teaspoons paprika
  • ½ teaspoon chili powder
  • 2 tablespoons goat butter
  • Sea salt and pepper, to taste



Boil sweet and fingerling potatoes in water for about 30 minutes or until soft.  Once potatoes are cool, chop them into small pieces.

Combine coconut oil, garlic, and onion in skillet, sauté on medium-high heat until onions are browned.

Add in potatoes, apples, paprika, chili powder, salt, pepper and mix well.   Do not crowd the potatoes in the pan, and don’t move them too much.  Allow them to brown on the bottom.  Cook for about 10 mins.

Once the bottoms are browned, flip the potatoes.  Add dried cranberries, and then add butter, in small chunks on top and let them melt down into the potatoes.

Continue until potatoes are desired crispy-ness on both sides.
