Sweet Potato Chips
This is one of my all-time favorite snacks. Like, if I could only eat 3 vegetables again for the rest of my life sweet potatoes would 100% be on the list. And this is just such a fun way to incorporate them into a snack. What do you think?
Sweet Potato Chips
Servings: 1-2
Time: 40 minutes
What you need: a baking tray, tin foil or parchment paper, cutting board, knife or mandolin
- 1 Sweet potato
- Extra virgin olive oil
- Sea salt
Optional
- Chili powder + Lime juice
- Rosemary
- Minced Garlic
- Cinnamon + nutmeg
Directions
Preheat oven to 350 F.
Wash then thinly slice the potatoes. Drizzle on extra virgin olive oil, sea salt and any other seasonings. Mix well. Arrange sweet potatoes on a tin foil or parchment lined baking sheet, making sure they are not overlapping. It is important for them all to have space so they can cook properly. If they are overlapping they will steam and not cook evenly.
Bake for approximately 25-30 minutes, flipping once in the middle. If the slices are thick, cook longer (up to 40 minutes) if they are thin they will take less time (around 15-20 minutes).
Allow them to cool completely before eating.
